Super Bowl Sunday is approaching and this is a great comfort food recipe that can be made ahead!!

Recipe type: Casserole


Layers of cabbage, corned beef and creamy mashed potatoes!

  • 5 C potatoes
  • ⅓ C sour cream
  • ¼ C milk
  • 4 C cabbage
  • 1 C corned beef or pastrami(or shredded turkey)
  • ½ tbs caraway seeds
  • ¼ thousand island dressing
  • 1¼ C swiss cheese
  • paprika, salt & pepper
  1. Preheat oven to 350
  2. Place potatoes in saucepan, cover with water and bring to boil. put cover on, reduce heat and simmer until tender(about 20 mins)
  3. Drain potatoes combine with sour cream, milk, salt & pepper- beat until smooth and set aside
  4. Saute shredded cabbage, meat and caraway seeds in olive oil over medium heat until cabbage wilts- about 4-5 minutes. Remove from heat and add dressing
  5. Spray casserole dish and layer:
  6. cabbage mixture, 1 cup cheese and spread mashed potatoes over all. top with remaining cheese and paprika
  7. Bake uncovered about 40 minutes or until golden brown
