Chicken peanut soup with mustard greens

Serves: 2 quarts
Rich savory soup that is loaded with healthy ingredients!
  • 1 C yellow onion, diced
  • 1/2 C carrot, diced
  • 1/2 C celery, diced
  • 1/4 C red bell pepper, diced
  • 1 T garlic, minced
  • 1 T chili powder
  • 1 tsp kosher salt
  • 1/2 tsp cayenne
  • 4 C chicken broth
  • 2 C cooked chicken, chopped or shredded
  • 1 can(14.50z) diced tomatoes
  • 1/2 C creamy peanut butter
  • 1/4 C dry instant couscous
  • 2 TBS olive oil
  • 4 C mustard green or collard greens (or fresh spinach), chopped
  • dry roasted peanuts, scallions & grape tomatoes, chopped for garnish
  1. Saute onion in oil in soup pot over med-high heat until softened, about 5 minutes. Add carrot, celery, pepper, garlic & seasonings. Cook, stirring ofter for about 5 minutes. Add broth, chicken & tomatoes bring to a boil. Reduce heat to low and simmer 10 minutes. Stir in peanut butter and couscous. Cover and remove from heat, allow to sit for a few minutes. Saute greens in olive oil until just wilted 3-4 minutes. Season with salt and pepper. Garnish each bowl with peanuts,scallions & grape tomatoes- Enjoy!
