I referenced a Paella recipe courtesy of Tyler Florence from the Food Network. I adjusted it to work with ingredients I had on hand!

Anne’s Paella

Very easy to put together. Super flavorful!
  • 1 lb jumbo raw shrimp- peeled and deveined
  • 3 Chicken Sausages- cut into bite size pieces
  • 1 Spanish onion
  • ½ poblano pepper, ½ red pepper
  • 4 cloves garlic crushed
  • 1 15 oz can whole tomatoes
  • 2 Cups short grain rice
  • 3 Cups chicken broth
  • 1 Cup dry white wine
  • ½ C frozen peas- thawed
  • Extra virgin olive oil
  • generous pinch saffron threads
  • big bunch flat leaf parsely- chopped
  • salt & pepper
  • sweet paprika
  • dried oregeno
  • Large paella pan or a wide shallow skillet w/lid
  1. Heat several Tbs olive oil(medium heat) in pan and cook chicken sausage until browned. Add onions, peppers, garlic and some fresh chopped parsley- cook 2-3 minutes then add tomatoes- with juice and crush with spoon in pan. Let cook 2 more minutes and fold in rice andstir fry to coat the grains. Pour in broth & wine and add saffron. Let everything simmer 15-20 minutes covered. Shake the pan occassionaly- don’t stir. Add the shrimp, salt & pepper, paprika and oregeno stirring everything to blend. Cover and cook another 5 minutes or until shrimp is pink. Add the peas and top with parsley. Serve immediately
